Sometimes it would be sensible to follow a pattern but where's the fun in that? Where's the challenge too?
The coat continued and in the top picture you can see I've tried fitting it over the fleece. The sleeves are progressing slowly too. The next stage of this project took AGES. It was hot and it was complicated getting the sleeves the right 'shape' and putting them in.

Looks very tricky, but well worth the effort.
When I did this, I deconstructed the jacket then once I had that done I would piece the fabric to roughly match the piece that I am working on (ie sleeve). Then once it is the same(ish) I would sew it down . Then when finished with the pieces I sew the jacket back together. If the pieced fabric you made is too big, ,just cut down to size. Hope this make sense.. would love to see it when it’s finished
Thanks, anonymous. That’s roughly what I did but without taking the original fleece apart. This was the third coat/jacket that I made.
